This aromatic and floral lavender syrup recipe is great for cocktails and beverages in the spring and summer. This DIY simple syrup is a great fresh and semi sweet additive to drinks!
Lavender syrup is a great way to add floral flavor to a variety of drinks. It’s easy to make at home, like most other simple syrups. It’s a great way to add a sweetness to cocktails like our Blackberry Lavender Gin Sour, Lavender Bee’s Knees, or to sweeten tea or lemonade, or top it with club soda for a homemade lavender soda.

Like I said, this recipe is as easy as any other simple syrup. You just heat water and sugar (or other sweetener) in a saucepan with lavender buds, let it simmer, then steep until cool. Once you put it in a jar, it stores in the refrigerator for a few weeks!
Lavender Simple Syrup
Simple Syrups are a great way to add flavor to a drink where you need sweetener anyway. Changes up the typical cocktail, and they can be made with fruits, vegetables, herbs and plants!
Many people can be disappointed when they make real lavender simple syrup at home because it usually comes out as pale lavender color, not the bright purple usually seen in store bought ones. I have seen people say to add blueberries to the mix in the saucepan to make it a darker purple if you like, but the light color doesn’t bother us.
The hardest part is getting your hands on organic lavender. You can grow it yourself, or find dried lavender for cooking online. We grow our own, all different kinds every year, so we always have some!
Ideas for Using Lavender
- Use in place of simple syrup in lemonade or limeade to make Lavender-ade. Refreshing!
- Use to make Lavender Old Fashioneds, or other lavender cocktails
- Lavender syrup is great in coffee drinks or lattes!
- Dried lavender makes for pretty touches on packages or gifts
- Make glazes or brush onto desserts such as a lemon cake
Make sure you use lavender that’s safe to eat. Organic is best. You don’t want to eat flowers that have been treated with pesticides. You can avoid this if you grow them yourself.
We recommend looking for lavender labeled as safe to eat if you don’t want to grow your own.
French lavender should probably be avoided for eating, as it contains camphor, which in large doses can be toxic. You probably won’t eat large doses of lavender, but just as a heads up! Also try our Pine Simple Syrup, Blackberry Syrup or Lilac syrup!

This Lavender syrup is full of floral and aromatic flavors. Great for drinks, cocktails and baking!
- 1/2 cup sugar
- 1/2 cup water
- 4 sprigs of lavender, fresh or 1 Tablespoon dried Lavender
- Combine water and sugar in small saucepan. Bring to a simmer, pull of heat.
- Add in lavender sprigs or dried lavender, let infuse for about 15 minutes.
- Strain out.
- Store in a clean jar for up to a month.
