This Lavender Collins cocktail is a twist on the classic and pairs lavender and bright lemon juice. This summery cocktail uses a great homemade lavender infused simple syrup.
The Lavender Collins is a delightful and refreshing summer cocktail that puts a spin on the classic Tom Collins. Using lavender simple syrup adds a dash of floral to this sparkling gin drink and is ideal for spring and summer events.

Tom Collins Cocktail
The difference between this cocktail and the original Tom Collins is the use of lavender simple syrup. It is a very easy sweetener to make at home and can be used in a number of other cocktails. In this Lavender Collins, the floral notes blend really well with the botanicals found in the gin. Try a Rhubarb Collins or Cucumber Collins, too!
A classic Tom Collins is pretty much a sparkling lemonade made with gin and simple syrup. We take this popular gin cocktail to a whole other level by adding a lavender infused simple syrup in place of regular simple syrup. Just make sure to use a cocktail shaker to mix it all up!
We used vodka in this one, but feel free to use a floral gin in this as well, for some added botanicals and flavor. Either works, so use what you like! Try our Lavender Margarita, too!
Lavender Simple Syrup
The lavender simple syrup is super easy to make. Although we do suggest you make this the day before you are planning on making this Lavender Collins. Simple syrup is easy to make, but it does require a little steeping and cooling time, which makes the day before a better choice.
We have also discovered this lavender simple syrup is tasty in other drinks as well, such as our Lavender Old Fashioned, Blackberry Lavender Gin Sour and our Lavender Bee’s Knees!
Club Soda vs. Sparkling Water
This ingredient we will leave up to your choice of what you would like to use. Club Soda won’t add flavor, just makes this drink bubbly and light. If you would like to use a flavored sparkling water, we encourage it! Lemon or citrus will add a lot of bright flavor, and there are so many great sparkling waters that have great flavors, so just experiment.
Tips & Tricks
- Alcohol – as we said, feel free to use gin or vodka in this cocktail recipe. If you want a purple drink, to make the lavender more realistic, feel free to use Empress gin or other butterfly pea infused gin.
- Garnish – lavender sprigs, a lemon wheel or lemon slice is perfect in this. We lined the glass in lemon slices, which adds some more fresh lemon juice to the drink. You can even use some dried lavender on top if you like.
- Glass – a tall glass, which is a highball or Collins glass is perfect for this cocktail.
But, if you want the lavender flavor to shine through, as we like, we just use club soda, as it keeps it simple, and than we get the great lavender floral flavors. Try our Strawberry Vanilla Collins, too!

Lavender Collins
This Lavender Collins is a great summer ccoktail with fresh lemon and floral flavors from the lavender. A great refreshing cocktail!
Ingredients
- 1.50 ounces vodka
- 1 ounce lemon juice
- .50 ounce lavender simple syrup
- sparkling water or club soda
- lavender sprigs and lemon slices, for garnish
Instructions
- Combine vodka, lemon juice and lavender simple syrup in a shaker with ice.
- Shake and strain into tall glass with ice.
- Top with sparkling water or club soda.
- Garnish with lavender and lemon slices, if desired.

Notes
If you want even more lemon flavor, feel free to use a lemon sparkling water, or one with citrus.
