Strawberry Vanilla Collins Cocktail Recipe

This Strawberry Vanilla Cocktail is easy to make and perfect for summer sipping!

 

This drink is perfect for a hot summer day with fresh strawberries and a hint of vanilla from the vanilla syrup. These simple ingredients combine with lemon juice and vodka or gin. Other great strawberry cocktails could be our Strawberry Cocktail with gin and elderflower, Strawberry Negroni, Strawberry Paloma, or Strawberry Mimosa!

Strawberry Vanilla Collins

Yep, you can make this with gin (our preference) or vodka, whatever you prefer. Plus, you can control the level of sweetness to your preference as well in this Strawberry Vanilla cocktail.

Simply add the berries to a cocktail shaker with vanilla syrup and muddle the berries. Then, add lemon juice, gin and ice. Shake and double strain by using a fine mesh sieve into a tall highball glass with fresh ice. Finally, top with club soda and garnish! Try our Strawberry Coconut cocktail, too!

Tips & Tricks

  • Alcohol – you can switch up the alcohol. If you don’t want to use regular vodka, use strawberry vodka or vanilla vodka. If you use gin, we prefer a citrus gin like lemon or a floral gin like Brockman’s (our favorite in this) or Hendrick’s. Don’t use a London Dry, it dries up the drink too much and doesn’t mix well.
  • Vanilla Syrup – this is easy to make homemade, just combine 1/2 cup of sugar with 1/2 cup of water in a small saucepan over medium heat. Bring to a boil and take off of heat. Add 1 Tablespoon vanilla extract or 1 scraped vanilla bean pod into the simple syrup. Let it sit and strain if need be (with the vanilla bean), and store in the fridge in a jar for up to 2 weeks. You can also use a dash of strawberry syrup if you don’t have any fresh berries.

Strawberry Vanilla Cocktail

These Strawberry Vanilla Cocktails are easy to make and easier to sip! A great refreshing summer cocktail perfect for fresh strawberries!

Ingredients

  • 1 large strawberry, washed and sliced
  • .50-.75 ounce vanilla simple syrup
  • 1 ounce lemon juice
  • 2 ounces Gin (We used Brockman's)
  • club soda

Instructions

  1. Add the sliced berry into the cocktail shaker with simple syrup.
  2. Muddle until berries have broken down.
  3. Add in lemon juice, gin and ice.
  4. Shake. Double strain with a fine mesh strainer into highball glass.
  5. Top with club soda.
  6. Garnish with a strawberry slice or lemon slice.
  7. Cheers!
