Make a Cucumber Collins cocktail all summer long with fresh cucumbers, and you will have a refreshing drink with gin or vodka!

You can make it with either London Dry Gin or vodka, whichever is your preference. We love a good London Dry in this recipe, but this summer cocktail will work well with either option.

Collins Cocktail

A Collins cocktail is among modern classic cocktails. A Classic Tom Collins has a base recipe of gin, simple syrup, lemon juice and club soda. This simple recipe makes it easy to add different flavors and ingredients to make seasonal cocktails with fresh ingredients.

Simply made in a tall highball or collins glass with ice cubes, just shake the ingredients in a cocktail shaker (minus the club soda) and strain into the glass. Top with the soda water and add a straw!

Cucumber Collins

This Cucumber Collins is simple as it just requires some muddling of cucumbers! Add some cucumber slices into a cocktail shaker with simple syrup and muddle. Top with gin and lemon juice with ice, and shake. Double strain into the highball glass and top with club soda.

Cucumber Collins

Prep Time: 5 minutes

A Cucumber Collins is a lovely and refreshing cocktail for all summer long!

Ingredients

  • 3 slices cucumber, cut into fourths
  • .50 ounce simple syrup
  • .75 ounce lemon juice
  • 2 ounces London Dry Gin (or vodka)
  • 1-2 ounces club soda

Instructions

1. Add cucumber slices and simple syrup into cocktail shaker.

2. Muddle cucumber. Add lemon juice, gin and ice.

3. Shake. Double strain into highball glass with ice.

4. Top with club soda, garnish as desired. Cheers!
