This Rhubarb Negroni is full of rhubarb flavor and you can make it all year long!
Rhubarb is in season in the spring and early summer, and this spring-y version, a Rhubarb Negroni is the perfect way to highlight rhubarb!

Rhubarb is fantastic for adding a new flavor to cocktail recipes that you make over and over again. We love to use rhubarb infused vodka and gin, which adds such a great twist to spring and summer cocktails. Try a Rhubarb Gimlet, too!
Rhubarb Flavor
Rhubarb is usually pretty tart, with a sour undertone. But, when combined with sugar makes a great rhubarb simple syrup, or adds a tart flavor when infused in an alcohol. It adds such a great flavor to a twist on the classic Negroni.
Plus, spirits infused with rhubarb have a gorgeous light pink color.
Rhubarb Negroni
When checking around for a Rhubarb Negroni online, we saw a lot with Zucca Rabarbaro. Zucca Rabarbaro is an Italian Amaro made with rhubarb roots. We didn’t have any on hand, instead we used Sfumato Rabarbaro. So, our Rhubarb Negroni has all the lovely herbal and bitter flavors of a negroni but with the added tang of fruity rhubarb by using a rhubarb infused gin.
We switched out the classic sweet vermouth to a dry white vermouth, which allows the flavor of the rhubarb to shine. Then, subbing the Campari, we used Sfumato Rabarbaro, a rhubarb based amaro from Capaletti. There are aromas of rhubarb, citrus peel and molasses. The flavor is earthy and smokey. If you want a LOT of rhubarb, use the Zucca Rabarbaro.
Tips & Tricks
- Rhubarb Amaro – we only had the Sfumato Rabarbaro, but if you really want to dial up the rhubarb flavor, use Zucca Rabarbaro.
- Infused Gin – the Rhubarb infused gin is easy, you just have to plan a few days ahead to have it perfect to make this drink! We tried it with Edinburgh Gin‘s Rhubarb and Ginger gin and it was fire!!
- Garnish – we used a thin slice of rhubarb, but obviously that won’t always be in season. A great garnish would be an orange slice (like a classic negroni)!
- Glassware – this delicious cocktail is served well in a rocks glass with a large ice cube, but can also be served up in a cocktail coupe. Take your pick!
This light, pre dinner drink is perfect all year long, even when rhubarb isn’t in season. Make some of that infused rhubarb gin and have this sip all year long.

Rhubarb Negroni Cocktail Recipe
This Rhubarb Negroni is full of rhubarb flavor from an infused rhubarb gin and Sfumato Rabarbaro. It's a light and simple mixed drink perfect all year long!
Ingredients
- 1 oz Rhubarb Infused Gin
- 1 oz dry white vermouth
- 1 oz Sfumato rabarbaro
Instructions
- Add all your ingredients to a mixing glass with ice.
- Stir for around 45 seconds.
- Strain into a rocks glass with a large ice cube, or serve up in a cocktail coupe.
- Garnish as preferred.
