This Rhubarb Collins cocktail is a lovely pink drink with the flavors of spring. Rhubarb vodka and rhubarb simple syrup combine for this fresh sip!

 

Rhubarb Collins gives the Collins cocktail a twist with homemade infused rhubarb vodka and homemade rhubarb simple syrup! You cannot miss the rhubarb in this Rhubarb Collins!

So, is this Rhubarb Collins a Rhubarb Tom Collins or just a Rhubarb Collins? Or, just a Rhubarb Gin Cocktail? Well, it is a variation on a Collins Cocktail. In this case, this is a Vodka Collins or a Joe Collins.

 

The rhubarb is the star here with its’ tart flavor. The infused rhubarb vodka is tart and sour, and combines so well with the sweet rhubarb simple syrup. These combined with tart lemon juice and topped with club soda makes for a fun and simple sip.

Rhubarb Cocktail

When spring comes, one of the first things to grow in our yard is our rhubarb. These welcome stalks popping out of the ground tells of better weather, but they also give us great inspiration for cocktails, like our Rhubarb Gimlet! Rhubarb cooked down with sugar in the syrup adds so much flavor. It’s the same premise that gives flavor to pies and desserts with rhubarb.

 

The rhubarb infused vodka isn’t super rhubarby flavored, but has a lovely pink color that adds more color to the cocktail.

What is a Joe Collins?

A Joe Collins is a classic vodka cocktail with sweet from the sugar syrup and sour from the lemon juice. Topped with club soda and served in a Collins glass.

 

Made with a simple 4 ingredients, the clean and crisp flavor makes it ideal for sipping or with dinner.

This recipe follows the formula in the Collins family of drinks: spirit, sour, sweet, soda. It is nearly identical to the Tom Collins (Old Tom Gin) or the John Collins (Whiskey) and uses vodka as the base spirit. Properly, this recipe is called a Joe Collins, but most just call it a vodka Collins. Try a Cucumber Collins, too!

Rhubarb Infused Vodka

We think rhubarb is an underrated drink ingredient and should be used more often. The Rhubarb Collins is just one great example of a vegetables’ potential in cocktails. Try out our Snap Pea Gin & Tonic as well as The Spring is Here with pea simple syrup, or the Roquette with arugula.

 

Simply cut up a stalk of rhubarb, place in a jar and pour vodka over it, we did a 1/2 cup when making this recipe. Then let sit for at least 3 days, checking it after 2 to make sure it’s where you want it. You can strain it out at 2 days, but we recommend 3. Strain the rhubarb pieces out and then you have a lovely pink rhubarb vodka to use! Try our Strawberry Vanilla Collins, too!

How do You Make a Rhubarb Cocktail?

Very simple to make – just add rhubarb infused vodka, rhubarb simple syrup and lemon juice to a shaker. Shake with ice and strain into glass. Top with club soda and add a straw, as well as an edible flower if you would like, or a stalk of rhubarb.

 

Tips and Tricks

  • Different Citrus – orange or lime work well in this too, instead of the lemon.
  • Rhubarb Syrup – make the syrup with maple syrup or honey instead of granulated sugar. It gives a deeper flavor, but not truly different.
  • Vodka or Gin – Feel free to use either. Gin, especially rhubarb gin can shine in this recipe.
  • Garnish – a lot of Collins have maraschino cherries, so feel free to add one if you would like.
  • Making ahead of time – because this is a carbonated cocktail, they are best when made and drank immediately. You can mix up the syrup, lemon juice and vodka before hand, and then add the club soda before serving.
