This non-alcoholic version is every bit as refreshing using garden fresh cucumber, fresh squeezed lime juice and a bit of bubbles! Perfect for vodka drinkers and happy hour lovers alike! Try some boozy cocktails like our Blueberry Cucumber Moscow Mule or Cucumber Cooler, too!

Cucumber Rickey Cocktail

A Rickey is a classic cocktail made with either gin or bourbon, lime juice and soda water. In this case, we didn’t use the spirits. We used a combination of fresh muddled cucumbers and some simple syrup to give a great flavor.

A classic Rickey is light and refreshing and all about balance of flavor. And we accomplished this in the zero-proof version. Just 4 ingredients make for a simple drink, but full of flavor!

Tips & Tricks

  • Garnish – cucumber slices or a lime wheel are perfect for this drink
  • Glassware – this one is perfect in a cocktail coupe or over ice in a tumbler
  • Make it Your Own – add in some mint when you shake, or use mint simple syrup. Use flavored sparkling water or club soda, lemon or lime would be lovely. 
  • Booze – you can make this a cucumber gin rickey easily, just add 1.5 ounces of gin or vodka.

Prep Time: 5 minutes

A Cucumber Rickey Non-Alcoholic Cocktail is a light and refreshing sip, perfect for all summer long!

Instructions

  1. Muddle cucumber slices with simple syrup in bottom of cocktail shaker.
  2. Add in lime juice and ice.
  3. Shake and strain into cocktail coupe.
  4. Top with soda water. Garnish as desired.
