An Earl Grey tea cocktail is the perfect refreshing cocktail for the summer! Make this one with vanilla vodka for some lovely sweetness.
We love a good cup of Earl Grey in the winter around here, but did you know it also makes a great iced tea in the summer? I love to make sun tea with a tea bag or 2 with the iced tea because it adds such a lovely flavor. We used that idea with this cocktail, highlighting the great flavors of the Earl Grey tea. Try it in our Earl of Orange cocktail, too!

This simple 4 ingredient cocktail is so easy to make, you just have to plan a little time to make the Earl Grey simple syrup. This is a simple 4 ingredient cocktail made with vanilla vodka, the Earl Grey simple syrup, fresh lemon juice and soda water. Easy to make for a group, too! Try a Rhubarb Collins, Blackberry Whiskey Collins or a Lavender Collins from us, as well!
Earl Grey Simple Syrup
This simple syrup is easy to make, just make a simple sugar and water syrup using our homemade simple syrup recipe and when it has come to a boil, take off the heat. Add in 2 tea bags and let steep for at least 30 minutes. When cool, take out tea bags and keep in an airtight container in the fridge for up to 2 weeks.
Easy peasy, and it adds a sweet tea flavor to any cocktail.
Tips & Tricks
- Glassware – This is a Collins cocktail which means it is classically served in a highball glass. This is for ice, and the fact that there are bubbles (i.e. the club soda).
- Garnish – a lemon wedge or lemon peel will be perfect, or nothing at all. A straw will do!

Earl Grey Collins Cocktail
This Earl Grey Collins cocktail is full of flavor from Earl Grey tea and vanilla vodka for a tasty and light summer sip!
Ingredients
- 2 ounces vanilla vodka
- .75 ounce Earl Grey simple syrup
- .50-.75 ounce lemon juice
- 2 ounces club soda
Instructions
- Combine the vodka, simple syrup and lemon juice in a cocktail shaker with ice.
- Shake and strain into a highball glass with ice.
- Top with club soda and garnish as desired.
