With spring and summer coming soon, I have been looking for some cocktails that would be good candidates for a warm summer evening. I found a great deal on some blackberries this weekend and with blackberries a summer fruit, I set out to make a nice drink that would be light and refreshing. A classic combination is whiskey and blackberry, so with a nice bottle of Cut Spike calling my name, I came up with this nice drink. While I was making this cocktail, my boys were bugging me to make a kid’s cocktail, so I included that at the bottom of this page.
The Blackberry Bourbon Fizz:
- 1.5 oz Bourbon or Whiskey
- 1 oz Blackberry Juice
- 1 oz Honey simple syrup
- Club soda
Pour the whiskey, blackberry juice and simple syrup into a shaker with ice. Strain into a rocks glass with ice. Top with club soda. Garnish with a mint sprig or a blackberry.
- 8 oz fresh blackberries
- 1/4th cup superfine sugar
- 1 tsp vanilla
Place the blackberries into a bowl with the sugar. Mash the blackberries and let the sugar pull the juices out of the berries over about 15 minutes. Take the pulp and juice and press it thru a fine mesh strainer to remove the seeds. Mix vanilla into the juice.
I got about 4 oz of blackberry juice out of 8 oz of blackberries.
Kid’s Cocktail Blackberry Fizz:
- 1 oz blackberry juice
- 5 oz lemon lime soda or ginger ale
Place a few ice cubes in a cup, pour in the blackberry juice. Top with soda. Let your kids enjoy!
