These boozy desserts are a great summer choice for grilling. A grilled donut ice cream sandwich is caramelized on a bbq, filled with ice cream and topped with a rum strawberry sauce. You need to grill your donuts this summer!
Have you ever tried a grilled donut before? So, it’s like the best thing to do with day old donuts. And do you want to know what is even better? Making a donut ice cream sandwich with them and smothering it with strawberry rum sauce.

Grilled Doughnuts
We used glazed donuts and they were ideal for grilling. The sugar caramelizes and when they cool it turns into a candy crisp shell on the donut. It only takes a few minutes for a donut to turn from breakfast pastry to summer dessert delight.
Donut Ice Cream Sandwich
No need to heat up the house for this summer dessert! Instead, we encourage you to take it easy (or multistepped) when it comes to dessert. Use leftover weekend breakfast donuts for this on a Saturday night. Or lets be real, a Wednesday lunch? LOL!
Toss those donuts on the grill after the burgers have been eaten, and grill until lightly toasted. Plop half with slightly softened ice cream (pick your favorite, any is good) and smush with another half. These are best eaten outdoors or over the sink, cause they are messy. This donut ice cream sandwich is a perfect summer treat!
Also, you may want a fork and knife, or if you are cool with being sticky, use your hands!
Strawberry Rum Sauce
It’s summer, so fresh berries are a must. And where there are summer berries and toasted pastry, there should be scoops of melty ice cream. We made this sauce right on the grill too, in a cast iron pan, but just as easily done inside on the stove.
Just don’t add the rum until it is off the heat and you are getting ready to serve it. Don’t want to cook out all that alcohol! If you are making some of these for the kiddos, just separate some and add the rum to the adults mix!

Grilled Donut Ice Cream Sandwiches Recipe
These Donut Ice Cream Sandwiches are made with ice cream in the middle and strawberry rum sauce, just to make it boozy!
Ingredients
Strawberry Rum Sauce
- 1 1/2 cup strawberries, sliced
- 1/3 cup water
- 1 Tablespoon lemon juice
- 2 Tablespoons honey
- 3 ounces aged rum
Doughnut Ice Cream Sandwiches
- 4 glazed donuts
- caramel or butter pecan ice cream
- Strawberry Rum Sauce (recipe above)
Instructions
Strawberry Rum Sauce
- Combine all ingredients in a cast iron skillet on the grill at 350 degrees. Cook for about 10 minutes.
- Stir and let cook down for another 10 minutes or so. Take off of heat. Add 3 ounces of aged rum. Stir.
Donut Ice Cream Sandwiches
- Cut donuts in half.
- Grill 1 1/2-2 minutes per side until the glaze melts and caramelizes.
- Take off heat, top with 1-2 scoops ice cream (no judging here!) and then top ice cream with strawberry rum sauce (about 1/4-1/3 cup for each donut). Put donut top on.

Notes
Use day old doughnuts. They hold up better on the grill and for the sandwich.
Plus, use any flavor ice cream, we aren't that bossy!
