When you think of Easter baskets, there isn’t anything more iconic than those famous chocolate bunnies! And what better way to make an adult Easter basket than to make a chocolate cocktail as a delightful treat? We came up with the Funny Bunny, a great Easter cocktail served in a hollow chocolate bunny which is a perfect cocktail for Easter brunch or a spring sipper! Or, make some N0n-Alcoholic Cocktails for Easter, too.

Easter Chocolate Bunnies

One of the fondest memories we have as children was waking up Easter morning and doing an egg hunt. Plus seeing what the Easter Bunny left us in our Easter baskets. The treasures that were found in those baskets were always exciting, but none were as treasured as that big chocolate bunny.  That chocolate bunny served as inspiration when we were thinking about making some chocolate cocktails for Easter brunch!

We wanted to make a dessert cocktail as a sweet treat and dessert. Check out our carrot cheesecake that will go great with this Easter bunny drink!

How to Make The Easter Bunny Cocktail

 

We used Mozart Dark Chocolate Liqueur as it is not super sweet and cloying, but rather a deeper and darker flavor with hints of vanilla and bittersweet cocoa. There is also Godiva. Other Mozart chooclate liqueurs come in Pumpkin, white chocolate, coffee, milk chocolate and strawberry chocolate.

 

We have made quite a few chocolate liqueur cocktails from them including the Chocolate Covered Cherry, Pumpkin Salted Caramel Martini, Orange Espresso Martini, Halloween Pumpkin Cocktail, Chocolate Covered Strawberry, and Pumpkin Old Fashioned.

First you have to make the chocolate bunny tiki mugs. Obviously you need to get access to the hollow space inside the chocolate Easter bunnies! We started out with the most popular place to start eating a chocolate bunny, the ears. So, we trimmed off the ears to make a cup! You may need to use a straw to make drinking it easier. There are usually 2 size bunnies to be found, and we used the smaller of the 2 at 6 ounces, which we thought was the perfect size.

 

Just before serving them, we filled the bunnies with crushed ice first. A spoon or bar spoon make this an easier process.

Then, mix up the other ingredients with ice in a cocktail shaker. Shake to combine and strain into the bunny using a small funnel. Garnish as you like and use a paper straw to serve. We used a garnish of fresh spring flowers.

Ingredients Needed for the Easter Bunny Cocktail

Since we had our very own edible Easter tiki mugs, we decided to make up this dessert tiki cocktail. Try some other tiki cocktails like our Cargo Cult or Peach Zombie.

  • Dark Chocolate Liqueur – this of course adds the chocolate flavor to the drink, and a bit of creaminess and texture, along with salt and smoke. We used Mozart Dark Chocolate Liqueur.
  • Scotch – We used a nicely peated Islay Scotch to give some salt and smoke to the cocktail. You could also use a peated highland Scotch as well.
  • Banana Liqueur – brings the tropical flavor to the party, and what better than our homemade banana liqueur? Chocolate and banana is a killer combo, and when added into the the mix of scotch and Dark Chocolate Liqueur, it added a hint of tropical sweetness and flavor! Try it in our Banana Peanut Butter Drink too!
  • Grapefruit Juice – this adds a sour note to the cocktail, and as always, fresh squeezed is best!
  • Bitters – we used a combination of Aztec Chocolate Bitters and Cardamom. But, Aromatic bitters and Tiki Bitters or Cinnamon Bitters work too.

Tips & Tricks

  • Scotch – Some great brands for your peated Islay Scotch could be Bunnahabhain, Ardbeg or Bruichladdich. Any of these or others will do, they are all premium liquors!
  • Glassware – obviously you don’t have to use the hollow chocolate bunnies as your cocktail glass. So, a rocks glass or tumbler would work great too! You could also do a chilled martini glass, but we preferred this over ice.
  • Garnish – edible flowers are a great choice, and a great snack, ha! Other ideas could be a drizzle of chocolate syrup, marshmallow bunny or grapefruit peel all are a fun addition on top of the drunk bunny cocktail.

Funny Bunny Easter Cocktails with Mozart Dark Chocolate Liqueur, Islay Scotch, Banana Liqueur and grapefruit juice. A tiki style cocktail in an edible chocolate bunny glass.

Ingredients

  • 1.50 ounces Mozart Dark Chocolate Liqueur
  • .75 ounce Islay Scotch
  • .50 ounce Homemade Banana Liqueur
  • 1.25 ounces grapefruit juice
  • 2 dashes cardamom bitters
  • 2 dashes chocolate bitters
  • Hollow Chocolate Bunnies

Instructions

  1. Cut off bunnies ears, fill with crushed ice.
  2. Combine all ingredients in a shaker with ice.
  3. Shake to combine, pour into hollow chocolate bunnies.
  4. Put in straws, and garnish.
  5. Cheers!

Notes

Make sure the bunny is hollow or this recipe won't work. And, as always, this can be made in normal glass, as well!
