A crisp refreshing Moscow Mule is delightful drink, a pleasing combination of sweet, tart and fizzy, which is why Moscow Mules are some of our favorite cocktails. One of our favorite herbs to use in cooking and in cocktails is rosemary. We always have rosemary simple syrup in our fridge, dried rosemary in our spice cabinet and even rosemary growing in our herb garden! Rosemary has a great cool, almost evergreen flavor which pairs up really well with citrus flavors, which means rosemary is definitely a star in cocktails.

For this cocktail, we used our rosemary simple syrup to add a fresh sweet rosemary flavor. The rosemary simple syrup is one of our standard simple syrups that we keep at all times in our fridge, and we like using it in drinks where we want a cooling herbal flavor like our Rosemary’s Pear cocktail.

Fresh grapefruit is another fantastic ingredient to use in cocktails. Grapefruit and rosemary is a delicious combination, the sweet tart and slightly bitter grapefruit brings out the cool herbal flavors and perfume of the rosemary. Add in the spicy warming note of ginger beer and you get a melding of flavors that play across your tongue, each sip a delightful refreshing burst of flavor.

We kept a splash of fresh lime in there to add a bit of acid brightness, plus traditionally a mule has to have a little lime in it! We used a smooth drinking local vodka (Cut Spike Vodka) made from American grains and avoided using any flavored vodkas as the grapefruit and rosemary flavors don’t need any other help to be bold and delicious.

  1. I make a honey thyme simple syrup for cocktails, but have never tried rosemary. Now I wonder why I haven’t, because it sounds like the perfect accent for tons of drinks. You’re right about that “evergreen” flavor – it’s crisp and herbal. Grapefruit is also one of my favorite juices — I prefer the tangy flavor to plain oj. I know what we’re starting our next “date night” with!

  2. Rosemary simple syrup is such a fun twist. I like it in the mule…. but can’t wait to try it in a French 75 cocktail make too! Cheers!

  3. Rosemary and grapefruit are a brilliant pairing! I can imagine that they must be amazing with the spicy ginger beer. I definitely don’t make enough mules, and your delicious recipes are making me realize that I must change that!
