A perfect whiskey cocktail for the fall, or all year long really. A refreshing pineapple whiskey cocktail with spiced honey simple syrup for a light and rich sip!
Cold fall nights can make a person yearn for warmer climates, and any drink that can evoke some images of warm exotic locations like tropical islands is loved around here. This pineapple whiskey cocktail does both, combining tropical sweetness of pineapple with the spicy warmth of a spiced honey simple syrup. Add in a dram of whiskey and before you know it, some of those winter blues will slip away! Also try it with grilled pineapple juice, too!
We used the same spiced syrup that we used in our Holiday Honey Punch, served in a punch bowl which has a sweet and spicy warmth that brings a great complex flavor to the drink. Adding in some great Single Malt Whiskey which makes this simple drink a fantastic drink to sip on! Even on a warm summer day, this is a great option for summer parties.
Other pineapple whiskey cocktail suggestions would be a pineapple whiskey lemonade, Hawaiian stone sour, pineapple whiskey sour cocktail or pineapple bourbon mule! They all sound delicious!
What Ingredients are Needed for the Pineapple Whiskey Cocktail?
- Spiced Honey Simple Syrup – we used spices to enhance a homemade honey simple syrup. These spices add a sweet warmth to the cocktail and works really well with the whiskey and pineapple juice. Make this Spiced Honey Simple Syrup beforehand so it can cool in time to room temperature.
- Pineapple Juice – pineapple juice adds a great tropical flavor to this cocktail. It also adds a little sweetness which plays really well with the spiced honey simple syrup and the whiskey.
- Whiskey – in this case we used a local single malt whiskey. We would encourage you to use a rye whiskey or an American single malt, but feel free to use a premium whiskey. You can use a Scotch single malt, but we would encourage a lowlands or highland whisky without a lot of smoke. We wouldn’t encourage a bourbon whiskey because it may be too sweet in this.
- Bitters – we used regular Angostura bitters in this. Just a simple 2 dashes.
How to Make the Pineapple Whiskey Cocktail
This cocktail is super easy to make, you just have to plan time ahead to make the Spiced Honey Simple Syrup. Just as long as you have time for the syrup to cool, you will have a great and easy 4 ingredient drink.
Simply combine all the ingredients in a cocktail shaker with ice. Shake and strain into a cocktail coupe. Garnish and serve! Couldn’t be easier.
Tips & Tricks
- Garnish – some great garnishes could be a cinnamon stick, floating star anise, pineapple slice or pineapple wedge on the edge of the glass. Lemon rind or even a sprig of mint in the summer.
- Glassware – in the new photos we used some lovely Libbey Stardust Martini Glasses. They are from the 1940s and are just lovely. But, a cocktail coupe is perfect for this recipe, as it is served up with no ice. You can also serve this over a large ice cube in a rocks glass or a tall glass and garnish it with some pineapple fronds!
- Bitters – we used regular Angostura bitters in this, but some other spiced bitters would be lovely. Some suggestions could be pecan bitters, walnut bitters, cinnamon bitters, or molasses bitters.
- Pineapple Juice – obviously fresh pineapple juice is the best, but getting fresh juice out of a pineapple isn’t the easiest task. Canned is fine – make sure to shake it well. Some other great pineapple cocktails are our Easy Pineapple White Wine Punch, Spicy Jalapeno Margarita, Pineapple Express Punch, Pineapple Blueberry Mojito.

Ingredients
Whiskey Lush Cocktail
- 1.50 ounces single malt whiskey
- 1.25 ounces fresh pineapple juice
- 1 ounce spiced honey simple syrup
- 3 dashes Angostura bitters
Instructions
Add all ingredients into a shaker with ice.
Shake well and strain into a coupe.

I am not a huge fan of whiskey but I can drink bourbon, like my hubby drinks, if I can cut it with some fruit juice! I am interested in trying the bitters!

It's not overly whiskey strong, you could totally use bourbon! The bitters are amazing - from Colorado, we bought all 5 that they offer - they are fantastic!
