A great fall hard pear cider cocktail with so many popular fall flavors!
We have a good friend who has a number of pear trees in their back yard. They are left over from an old orchard that used to be on the land where their house was built. Every fall we get a basket of pears from these trees, and like the apples we get from our family trip to the orchards, those pears are a flavor that we associate with with fall.
Hard Pear Cider
When we ran across some hard pear cider while we were shopping for inspiration, we knew this would be a nice ingredient for a fall cocktail we call The Autumn Pear.

What to do for a Fall Cocktail?
We were wanting to develop a nice fall cocktail that would remind us of the crisp cool fall days. Of course we started experimenting in the kitchen to see what we could come up. We started out with a nice bottle of blackberry hard pear cider.
It was very crisp and tart which was very reminiscent of a classic old style European cider, which tend to be more tart then what most of us associate with ciders we grew up with.
We also used it in this Honey Bourbon and Pear Cider cocktail!
With a nice tart base that gave a clean crisp flavor, we next wanted to add a little punch to the drink.
For the base spirit, we decided that bourbon would be the ideal pair to the pear. Strong enough to add a big boozy burst, bourbon also adds in a sweet note of caramel and vanilla that really compliments the tart pear. Bourbon is a great spirit for fall drinks, too. Bourbon also highlights the warm baking spices that are so prevalent in fall dishes while also bringing a warmth that helps chase the chill of a fall day.
What flavors of Fall Did We Use?
Speaking of warm baking spices, in an earlier cocktail, we made a great clove infused simple syrup that really brought a nice spicy warmth and complex depth and sweetness. Clove is a common pairing with pears, often used when poaching. Then when we combined the pear and clove, we knew this flavor combination was going to work.
We added some fantastic honey and camomile bitters that brought a sweet floral complexity that added a depth to the drink. We bought these bitters at Dram Apothecary, a really cool bitters company who forages for all their ingredients in the mountains of Colorado.

What Ingredients are Needed for the Autumn Pear Cocktail?
- Clove Simple Syrup
- Bourbon
- Bitters
- Cinnamon and Sugar
- Lemon Juice
- Pear Hard Cider
Then, we finished the cocktail by rimming the glass with a mixture of cinnamon and sugar. We used more cinnamon than sugar which made for a mixture that was not nearly as sweet as the cinnamon sugar mix used on toast. The cinnamon sugar rim adds a nice aromatic perfume of cinnamon and a slightly bitter sweet flavor that helps keep the cocktail from getting to sweet. Then topped with the hard pear cider!
A sprig of fresh rosemary adds a nice splash of color and a hint of evergreen herbaceousness. Pleasantly tart with a nice boozy burst, the Autumn Pear is sure to tickle your fall fancy!

The Autumn Pear - A Bourbon Cocktail
A perfect autumn cocktail, with lovely fall flavors.
Ingredients
Autumn Pear Cocktail
- 2 ounces bourbon
- 1 ounce clove simple syrup
- .75 ounce freshly squeezed lemon juice
- 3-4 drops bitters (we used Honey Chamomile)
- 1.50 ounces pear hard cider
- cinnamon and sugar mixed together for rimming
Instructions
Combine all ingredients in a mixing glass and stir to combine.
Pour over ice in cinnamon sugar rimmed glass.

This is super delicious! Love the clove simple syrup to add fall spice. My only adjustment is that it was too sweet with 1oz of the syrup, so I’ve cut it in half. Yum’
