A great brunch recipe, the butter combines fruit and herbs for this savory French Toast!

What Ingredients are Needed for the Blueberry Thyme French Toast?
- Blueberry Thyme Butter
- Butter
- Blueberries
- Thyme Leaves
- Salt
- French Toast
- Vanilla Extract
- Half and Half
- Sugar
- Bread
- Milk
- Eggs
- Maple Syrup
- Powdered Sugar
- Cinnamon
Taking over an Instagram feed other than ours was a first for us (and to be honest a little intimidating!) but with a chance to share our work with a bunch of new viewers and a way bigger audience, we wanted to bring some really beautiful ideas to Uncommongoods’ readers. We started out with a really awesome taco kit, which we made some vegetarian tacos!
We also made a really great batch of Beer Brittle Chocolate Bark and a nice Stout and Champagne cocktail that we served on this cool Milk and Cookies Dunk and Drink set.
We also had a chance to check out this really nice Stoneware Butter Crock!
Of course this gorgeous Butter Crock had to have something that tasted as awesome as the crock looked, so we came up with a really delicious Blueberry Thyme butter. Incorporating fresh blueberries and fragrant thyme, this compound butter has a sweet and savory flavor that really worked as a spread on toast or especially French Toast. We got some great shots of a delicious butter in a beautiful crock!

Savory French Toast with Blueberry Thyme Butter
A savory and fruity butter topped French Toast perfect for breakfast or brunch.
Ingredients
Blueberry Thyme Butter
- 1 1/2 Tablespoon thyme, fresh or 1/2 Tablespoon dried
- 1/2 cup blueberries
- 1 teaspoon salt
- 2 sticks butter, room temperature
For the French Toast
- 2 teaspoon vanilla extract
- 1 cup half and half
- 1 Tablespoon sugar
- 1 loaf crusty bread: baguette or french loaf
- 1 cup milk
- 3 eggs
- maple syrup for topping
- sifted powdered sugar for topping
- dash cinnamon
Instructions
For the Blueberry Thyme Butter
Put butter in stand mixer, or in large bowl if using a hand mixer.
Pour in blueberries and blend until berries are broken up and butter slightly purple colored.
Add in thyme and salt, mix until blended.
Put on saran wrap in a long tube shape, wrap with foil and twist ends opposite ways to tighten. You can also place in a mold to form a ball.
Place in freezer for 30 minutes, then in the fridge before serving.
For the French Toast
Cut bread into 1/2 inch thick slices.
In a dish, mix together eggs, milk, half and half, sugar, vanilla and cinnamon.
Whisk to combine.
Dip bread slices in mixture, coating both sides, then remove from dish and set aside.
Repeat until all bread is coated.
Heat iron skillet or griddle over medium heat.
Sizzle butter in the pan when hot.
Cook French Toast on both sides until golden brown, being careful not to burn.
Top with Blueberry Thyme butter, maple syrup and powdered sugar if desired. Enjoy!
