In the course of making cocktails, we try to make a lot of our own ingredients from scratch. One of our favorites to make is a simple syrup recipe. Classic Simple Syrup can be an integral part of a cocktail, by adding sweetness and flavor to make the drink just right. We have made a lot of simple syrups out of herbs, fruit and other sugars.

Our favorites infused simple syrups though, are the herbal ones. They add an extra ingredient to our drinks that we enjoy, such as sage, rosemary and Mint Infused Simple Syrup. This rosemary simple syrup is something we add to a lot of our favorite cocktail recipes, as both of us like rosemary very much. We think it adds so much herbaceous flavor, and one of the best ways to make this fragrant syrup is by using fresh rosemary sprigs.

 

We have used it to add additional flavor into such cocktails as Rosemary’s Pear, The French Tart and the Rio Rose. Simple syrups can be infused with anything you can think of, so use your imagination and come up with your own unique flavors! We love it made with flavors like rhubarb simple syrup, lemon simple syrup, and even no sugar with Stevia Simple Syrup

 

What Ingredients are Needed for the Rosemary Simple Syrup?

  • Water – nothing special needed, just tap water will do!
  • Sugar – we used granulated sugar for this recipe to highlight the fresh rosemary.
  • Rosemary Sprigs – we used fresh rosemary for this rosemary syrup. But, if it isn’t in season, you can used dried. You just need to watch how long you infuse the syrup and how much you use of the dried rosemary.

 

Simple syrups don’t just have to be used in craft cocktails, they can also be used in your favorite beverages, iced tea, make sorbet and even used in baking! It is a very versatile ingredient, and homemade syrups offer a variety of flavors that you just can’t find at your local grocery store.

How to Make Rosemary Simple Syrup

Simple Syrup is such an easy recipe to make with simple ingredients. You need just 3 ingredients, water, sugar and rosemary. Equal parts water and sugar 1:1.

 

Simply combine water and sugar in a small saucepan until sugar dissolves and bring to a boil over medium-high heat. Take off of the heat and add in rosemary sprigs. Let the syrup steep for at least 15 minutes, but you can go longer if you check the flavor every so often. I wouldn’t go more than 30 minutes though.

 

When ready to your taste level, strain the rosemary out by using a fine mesh strainer. Discard rosemary and pour cooled syrup into a glass jar or bottle. Store in the fridge for up to 2 weeks.

Tips & Tricks

  • Can Simple Syrups go bad? They can get moldy if they sit too long. When making your own simple syrup we encourage you to store it in the fridge in a jar or bottle, but for no more than two weeks. We actually have a whole shelf of simple syrups in our fridge at any given time!
  • Sweetener – feel free to use a sweetener that isn’t white sugar. You can try honey, maple syrup, brown sugar or Stevia instead. You can play with the basic recipe 1:1 and even combine some if you want.

Rosemary Simple Syrup

Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

This fragrant simple syrup is one of our favorites!

Ingredients

Rosemary Simple Syrup

  • 1 cup sugar
  • 1 cup water
  • 4-6 rosemary spears

Instructions

Bring the water to a boil.

Add sugar, stir to dissolve.

Add the rosemary spears, let the infusion boil for 60 seconds.

Remove pan from heat and let steep for 30 minutes-1 hour depending how strong you would like it.

Pour the cooled syrup through a mesh strainer into an airtight container, preferably glass.

This may be stored in the fridge for up to 2 weeks.

Yes, it can! You can freeze the whole batch in a jar if you like, or other container. Or, if you want smaller portions, you can freeze it in an ice cube tray and then those ice cubes in a ziplock bag should keep for around 6-8 months. Cheers!

Perfection! Loved this! I made a wonderful sangria with white wine, fresh squeezed grapefruit juice, lemon, and this rosemary simple syrup! Garnished it with a sprig of rosemary and a lemon wedge and it was beautiful!

I started out doing half the recipe (1 cup water, 1 cup sugar, 2 rosemary). It wasn't quite right so I added half a cup of sugar and 1 more rosemary, let it sit covered for an hour and it was good, but the rosemary wasn't as strong as I had hoped. Probably will do 1 cup water, 1.5 cup sugar, 4 rosemary next time!! :)

That recipe is definitely rich simple syrup (when you add more sugar than water), but it sounds as if you are on the right track. Feel free to add as much rosemary as you want and keep the sugar/water ratio the same, and that should give you a better rosemary flavor.

Oh my goodness. I adore rosemary and I will definitely have to make this! I won't have a kitchen for a while since my husband's job is requiring us to move around and live out of hotels for the next few years, but once I settle down, I will have to give this a try. Thank you!
