Spooky Halloween Monster Eye Brownies – Easy Recipe

A fun treat for adults and kids alike, make this Halloween Brownie Recipe with eyeballs on them! These Monster Eye Brownies are spooky and super fun!

 

When the calendar rolls around to October, our house starts to turn shades of orange and black, and our boys start talking about what what they are going to be on Halloween. Pretty soon, we have lots of invitations with little ghosts and ghouls inviting us to a Halloween party. This fun recipe makes some great chewy brownies for the Halloween season that can even be made with store-bought brownie mix.

Halloween Dessert

We can’t have ourselves showing up to a party empty handed, so we are always thinking of cool looking treats we can take to the various events that we are invited to. When we saw these orange and black Halloween Oreos, we thought they might be perfect for making some Halloween Oreo Monster Brownies.

We are both suckers for a good brownie, especially any brownie with a really rich chocolate fudge flavor. So, we started with a good recipe that we have made many times in the past which makes a nice fluffy brownie with a nice fudgy center. Then we decided the orange Halloween Oreos would make a cool looking filling while adding a nice crunchy texture because the orange creme would make a nice contrast color to the rich brown chocolate.

The orange creme expanded when it was cooked, and gave a nice layer of Oreo creme in a couple of bites. Since the creme center is typically the favorite part of the Oreo, having an orange Oreo creme filling gave these Monster Brownies a real surprise color layer.

A topping of crumbled Oreo cookies made for a nice crunchy topping plus gave the Monster Brownies an appropriately monstrous appearance, especially when we added a couple of of candy googly eyes to each brownie. Just add them to the top and the sides for effect!

Ingredients Needed for the Halloween Brownie Recipe

  • Dark Chocolate – baking chocolate that has been chopped in order to be melted. The melted chocolate is mixed with the melted butter.
  • Butter – use unsalted butter, and slice into pieces in order to melt.
  • Espresso Powder – instant espresso powder doesn’t add a lot of coffee flavor into the brownies, but makes for a richness in the brownie batter.
  • Sugar – obviously to sweeten the brownies even more than they will be!
  • Light Brown Sugar – a packed 1/2 cup of brown sugar gives a richness to the brownies.
  • Eggs – there are 5 eggs in this brownies to give a richness and fudginess to the dessert recipe.
  • Flour – an obvious ingredient. Use all-purpose flour.
  • Salt – salt always adds a lot of flavor to a sweet dessert. Helps cut down the richness a little.
  • Oreos – again, we used the orange creme filled Halloween Oreos for this recipe. We have some other ideas down below. We used some for the filling and some for the topping.
  • Candy Eyes – again, these candy eyes are optional but if you want a fun Monster-themed brownie recipe for the holiday, this is a fun way to add a touch of whimsy.

How to Layer the Oreo Halloween Brownie Recipe

This recipe is our favorite homemade brownie recipe and works great even without the Oreo layer. You can use leftover Halloween candy in the middle and top. Or, just make it without any additions, because these fudgy chocolate brownies will be loved by the whole family as great Halloween brownie ideas.

 

Layered Oreo brownies are easy to do, and make for some fun spooky desserts. Make your brownies by mixing your dry ingredients into your wet ingredients in a large bowl. You can use a hand mixer if you would like. Simply pour half the batter in the bottom of the brownie pan and layer 12 Oreos over the batter. Then, top the Oreos and with the rest of the batter, making sure to scrape down the sides of the bowl with a rubber spatula.

 

Break apart or cut the Oreos to place on the top. You can tuck some in at an angle or stick some upright to give layer and dimension to the dessert. This also gives some great spots to add the candy eyes.

Then you want to bake the brownies, and once baked and cooled to room temperature on a wire rack, cut the little monsters apart. Then, add the Candy Eyes for effect for these Spooky Eyed Halloween Brownies.

 

These delicious brownies make for a spooky treat for your favorite holiday! A great way to give a little bit of spooky to a themed dessert but nothing gory, just candy eyeballs!

Tips & Tricks

  • Other Oreo Colors – if you want some other color than orange Boo Oreos, there are some other ideas for you. Cotton Candy Oreos are light blue and light pink with a vanilla cookie. S’mores Oreos have a graham cracker cookie and a layer of white and brown cream. Lemon Oreos are a vanilla cookie and yellow cream. Mint Oreos are chocolate cookies and green filling – could be zombie brownies? If it were me for Halloween I would go with the mint/green ones!
  • Topping – if you don’t want just the orange Boo! Oreos on the top of the brownies, we have some other ideas. Drizzle some white frosting on the top to look a little like mummy wrappings for Halloween mummy brownies, then add the candy eyes. Or, add some M&M’s in different colors or just orange along with the candy eyes. Candy corn could also be fun. Or, white chocolate chips  and the candy eyeballs for ghost brownies?
  • Boxed Brownie Mix – you can make this recipe with a boxed brownie mix as well, if you don’t want to make it from scratch. Just layer the brownies in the same way, batter/Oreos/batter/Oreos and it will bake the same, just watch the cooking time on the box of brownie box and go with those package instructions.
  • Baking – we suggest using parchment paper in the bottom of the baking pan for ease of removal, as well as cooking spray. Use it for our Pumpkin Bars, too!

Halloween Brownie Recipe

Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes

A great Halloween dessert, this one is monster themed and has eyeball candy in the brownies! Make this Halloween Brownie recipe for your Halloween party!

Ingredients

Halloween Brownies

  • 12 ounces dark chocolate, chopped
  • 1 cup unsalted butter (8 oz) cut into 1 inch pieces
  • 1 teaspoon instant espresso powder
  • 1 1/2 cups sugar
  • 1/2 cup packed light brown sugar
  • 5 eggs, room temperature
  • 1 1/4 cup all purpose flour
  • 1 teaspoon salt
  • 20 oreos
  • candy eyes, optional

Instructions

Preheat the oven to 350°.

Butter the sides and bottom of a 9x9 baking pan. Line the pan with parchment paper if desired.

Put the chocolate, butter and instant espresso powder in a large bowl and set it over a saucepan of simmering water, stirring occasionally, until the chocolate and butter are completely melted and smooth.

Turn off the heat, keeping the bowl over the water and add the sugars. Whisk until completely combined, then remove the bowl from the pan. This mixture will be room temperature.

Add 3 of the eggs to the chocolate mixture and whisk until combined. Add the remaining eggs and whisk until combined. Don't over beat the batter or your brownies will be cakey.

Sprinkle the flour and salt over the chocolate mixture. Using a rubber spatula (not a whisk), fold the flour mixture into the chocolate until just a bit of the flour mixture is visible.

Pour half the batter into the prepared pan.

Place 12 Oreos on top of the batter.

Pour the rest of the batter over the top of the Oreos, making sure to cover them all.

Crumble or cut the remaining 8 Oreos and sprinkle over the top of the batter.

Bake in the center of the oven for 30 minutes, rotating the pan halfway through the baking time, until a toothpick inserted into the center comes out with a few moist crumbs sticking to it.

Let the brownies cool completely, then lift them out of the pan using the parchment paper. Cut into squares and serve. Sprinkle with candy eyes.

Store at room temperature in an airtight container or wrap with plastic wrap for up to 3 days.

Notes

Don't add candy eyes until brownies have cooled.

Brownies and Oreos are my two dessert weaknesses in life, so everything about this sounds like perfection! I'm not usually a fan of Halloween, so making Halloween specific treats isn't ever something I think about, but who can resist a treat with googly eyes? I love this!

I give you credit -- I don't think I was ever this much fun when my daughter was young. I was horrible with halloween costumes and I can only remember a handful of times when I went out of my way to make something "kid-friendly". You definitely get the "cool Mom" award.
